What is cold soluble gelatin?

There are some applications where the heating stage required to dissolve gelatin tends to complicate the processing or preparation of a product. Meanwhile, in certain applications, a heating stage is not required at all during the preparation.

PB Gelatins/PB Leiner was the first gelatin producer to introduce cold soluble gelatin on the market and it is still the market leader for these specialty gelatins. Our cold soluble gelatins have exactly the same textural properties as traditional gelatin, which means that the unique melt-in-the-mouth effect, texture and consistency remain unsurpassed.

We provide two ranges of cold soluble gelatins under the brand names CRYOGEL® and INSTAGEL®. They are available in either a bovine or porcine version.
