ENZYMES / Carbohydrases
Our starch hydrolyzing carbohydrases work on amylose and amylopectin from a variety of grain sources. The principal applications are production of corn syrup, ethanol, baking, and brewing.
Our non-starch carbohydrases are those enzymes which hydrolyze polymers made up of six carbon sugars but do not include amylose and amylopectin degrading enzymes. Examples would be cellulases which will ultimately produce glucose when complete hydrolysis is achieved. Another example is Lactase which hydrolyses lactose to glucose and galactose.
