MATCHA TEA PRODUCTS: Matcha is categorized into three grades: ceremonial grade, culinary (or ingredient) grade, and industrial grade. The difference between the different grades of matcha comes down to quality and flavor.
QUALITY & FLAVOR
Matcha quality and flavor are determined by the time of harvest along with cultivation and manufacturing methods. Higher grades of matcha tend to have smoother flavor, stronger vegetal aroma, and a more vibrant green color. Lower grades tend to have higher levels of astringency, earthy aroma, and more yellowish or brownish tones.
