Because trehalose is formed by the bonding of two reducing aldehyde groups, it has no capacity to participate in the Maillard reaction with amino acid.

In nature, trehalose can be found in animals, plants, and micro organisms.It can form a kind of special protective shield on the surface of cell to keep the cell activity in cold, dry or high temperature conditions.
