Trehalose is a natural alpha-linked disaccharide formed by an α,α-1,1-glucoside bond between two α-glucose units.

Trehalose appears as white , incompact crystal powder, soluble in ethanol, insoluble in diethyl etherand benzene.

Trehalose has a sweet taste and high water retention capabilities, and is used in food and cosmetics.

Because trehalose is formed by the bonding of two reducing aldehyde groups, it has no capacity to participate in the Maillard reaction with amino acid.

In nature, trehalose can be found in animals, plants, and micro organisms.It can form a kind of special protective shield on the surface of cell to keep the cell activity in cold, dry or high temperature conditions.
